I've been gluten free for the past 14 years, since being diagnosed with a gluten intolerance. I had a food intolerance test that was much like an allergy test, with scratches made into the skin. The result of this test was an intolerance to diary, soy, beans, barely, malt and corn and of course gluten. I was diagnosed with Celiac Disease by a gastroenterologist in 2008. I decided to write this blog a few years ago, starting again recently... to share knowledge and review restaurants. I want to share my food experiences with those of you that also have Celiac Disease or Wheat Allergies and Intolerance's. I'm self educated so I cannot 100% guarantee any medical information since I am not a doctor. I am an elementary school teacher seeking employment.
